Tasty Tuesday ~ EASY Italian Roast Chicken and Potatoes
EASY Italian Roast Chicken and Potatoes
*Comfort food that makes your house smell divine while baking!
Hey – I am trying to cook not photograph… LOL, sorry for the BAD pic!
Ingredients:
- · Whole Roasting Chicken, thawed
- · 1 Stick of Butter
- · 1 Packet (Good Seasons) Italian Dressing
- · 1 Medium Onion
- · 2 Ribs of Celery
- · 1 (about 3lbs.) Bag of Potatoes
- · Salt and Pepper
Directions:
~ Preheat Oven to 350*
1. Rinse then dice Onion and Celery Ribs
2. Sauté 1/2 the diced Onion and all the Celery in about 1 TBS. Butter
3. Rinse Chicken; Make sure you get all the “goodies” out!
4. Place Sautéed Onion and Celery inside the Chicken
5. Set ‘stuffed’ Chicken in a Deep 9X13 (Lasagna type) Dish
6. Rinse and Cut up Potatoes (bite size), place all around Chicken, add remaining onion if you like
7. Melt remaining butter (microwave) and pour over all!
8. Sprinkle Italian Dressing mixture over Chicken and Potatoes
9. Sprinkle all with Salt and Pepper
10. Cover with Tin Foil
11. Bake for 1.5 hours, then uncover (remove foil) and bake for another ½ hour (+) to “crisp” all… Roast Chicken should be baked to about 165*.
12. Serve it up and listen to all the cries of joy and love for the best Cook ever….

Who says it has to be gourmet all the time all day sweetheart? Did you see how easy my “ancho chili bacon wrapped chicken tenders were” on my vlog today? Gourmet is soooooo over rated honey!! The pic looks succulent and I’m coming to your house for dinner!!
Can I just mention that i freaking got home about 1 hour ago!! talk about a 16 hr day!! Don’t even get me started!! I’m so windblown, I think half of me is still in Batavia, LOL
I’m making Italian wedding soup for dinner tomorrow. I made Chicken Tikka Massala on Sunday for dinner. Didn’t use boneless chicken breasts, used bone in. Reserved 2 of them along with all the bones from the other breasts. Will simmer the nicely roasted bones with a couple of chicken cubes tomorrow. just finished dicing the carrots, celery & onions, have them in water. Took out the ground beef.
Tomorrow I will simmer the bones, add the veggies, frozen spinach, homemade meatballs, shredded chicken (reserved from Sunday) then the amazing pastina…
I’m making a quick bread with jalapeno and smoked gouda to go with it. Yeah baby!! Does that sound gourmet my friend? Not!! But it is delicious!!!

LOL – Here is the difference… on your post today I immediately wondered if I could just soak the chicken in Redhot… BUT everything you say and describe sounds amazing !! I love wedding soup… i am anxious to hear how you do the little meatballs and that bread…. I must have some!!! I do have a question about Souvlaki… Can I marinate my chicken exactly as you describe on your Souvlaki Dip recipe, then make the sauce… then use both in open faced pitas rather than a dip?? I want it like I get it at Sparros… LOL… But tell me is that like a Mcds burger instead of a juicy delicious homemade??? LOL
And Ann’s host as been out for what – over 24 hours…. she must be flipping!!!

Meanwhile, Regarding the chicken souvlaki dip, oh my heaven’s Michelle, your are a genius, true and true. That would make the most amazing chicken souvlaki sandwich!! You don’t have to puree the meat of course, just leave it the way they are in chunks, PERFECT!!!
We love Italian meatball soup too sweetheart. As for the Franks, you know your klling me right? You know I will have to come up and hug you to death right!! ♥
