Tasty Tuesday ~ Chicken Cordon Bleu Roll-ups
Chicken Roll-ups ala Cordon Bleu Style
These chicken rollups are fabulous… like fancy schmansy dinner fabul-icious – BUT easy enough to make for a weeknight dinner. We had these this week – with a baked potato bar – BEST dinner … YUMMMMMM!!!! They really are that good!!
I always make a double batch – usually a ‘Sunday Funday’ project, and freeze them for other meals on a busy nights.
This recipe also allows for an infinite amount of substitutions… But here’s how we do it ~
- Olive Oil – 2 TBSP for ‘seasoning’ the baking dish
- Chicken – 8 cutlets OR 4 boneless breasts – pounded out to ½” thickness, then cut in ½ lengthwise (you can buy the thin sliced cutlets but I bet you pay double for those – LOL)
- Ham – 8 slices cooked ham
- Swiss – 8 slices
- Milk – ¼ cup
- Italian Breadcrumbs – ½ cup
- Parmesan Cheese – ¼ cup
- Pepper – 3 TBSP
- Toothpicks for Holding
Grease pan and preheat oven to 375 degrees.
Prepare chicken as described above…
In one shallow bowl, mix bread crumbs, parmesan cheese and pepper.
Pour milk into 2nd shallow bowl.
Take each piece of chicken, lay a piece of ham and a piece of cheese on it then roll from bottom to top and secure with a pick.
Dip each chicken rollup into the milk, spooning over as needed. Then set each rollup in bread crumb mixture – again spooning the mixture over the top to cover all.
Place all rollups in baking dish – not touching… and bake at 375 for about 25 minutes. Internal temp should be 165-175 degrees. Let set for a few minutes before removing toothpicks and serving.
