Meal Plan ~ finally!

Hey there – Sporadic post’er’ here….  I know I have said it before and every time I fall off the band wagon, I realize just how important MEAL PLANNING really is.  We are in our BUSY season…. Trying to get ready for back to school, full force football and cheerleading, busy season at work for both K and I – things are CRAZY!!  The last couple weeks of this we are finding ourselves asking, “What’s to eat” when we get home at 8:30 pm at night and it just does NOT work!!  I mean there just is not time to make a full dinner – does anyone else feel this way??  I am totally just about the world’s worst coupon-er right now and the only thing in my freezer is a lb. each of hamburger and sausage, 2 turkeys, some turkey bacon, some steaks and the gross “Land o’Frost” lunch meat – seriously…. Yuck!!.  In the pantry I still have oatmeal and some fiber one brownies.  So although I guess we wouldn’t really starve, we are buying “fast” food out – all the time – and this is not economical OR healthy!!  I have got to get back to buying groceries and definitely to meal planning.  I know this is so hard to do, especially when Sunday’s are the only day we aren’t scheduled and when the weather is beautiful the last thing I want to do is plan, shop and cook but it is so necessary!!  So today I did all three, I planned, I shopped and I cooked and prepped meals for the whole week! 

I planned out our week by making a schedule and then I inventoried what I do have and what is on sale this week and then I made the plan.  I browned the sausage and the burger I already had (saving ½ of the browned meat), then made a crockpot full of sauce. I froze ½ the sauce for another week, and then I cooked some noodles, al-dente; and bagged them up in the fridge.  The sauce and the noodles can be heated up and mixed with a bag of shredded mozzarella for quick, delicious goulash.  I ran and did my shopping then I marinated the steaks and the chicken… both of these can be quickly grilled and served with veggies or salad.  From Friday on, we are camping with friends for the long weekend, and we already planned out those meals…. So that only leaves Thursday and the need for one more quick meal.  Knowing I would have leftover browned meat, I remembered seeing a recipe for quesadillas that sounded awesome – and easy, so I have included the link….  Here is the plan – please let me know what you think….

 

MONDAY:  Practice / Steaks (marinated in fridge) with grilled zucchini

TUESDAY:  Practice / Goulash (ready, combine and throw in crock pot before practice) with salad

WEDNESDAY:  Last Minute Back to School Shopping / Grilled Chicken (marinated in the fridge) with left-over zucchini and salad
